1001 Rice Curd Rice Recipe

Ingredients:

1 cup 1001 rice (rinsed and soaked for 20 minutes)
2 cups water
1 cup plain yogurt (curd)
1/4 cup milk (optional, for a creamier texture)
Salt to taste
1 tbsp oil or ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1-2 green chilies, finely chopped
8-10 curry leaves
1 tbsp grated ginger
1/4 cup pomegranate seeds or grated carrots (for garnish, optional)
Fresh coriander leaves for garnish

Instructions:

1. In a pot, add 2 cups of water and bring it to a boil. Add the soaked 1001 rice and cook until the rice is soft and fluffy. Allow the rice to cool slightly.
2. In a large mixing bowl, add the cooled 1001 rice and mash it lightly with the back of a spoon.
3. Add yogurt, milk (if using), and salt to the rice. Mix everything well to create a creamy consistency.
4. In a small pan, heat oil or ghee over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
5. Add chopped green chilies, curry leaves, and grated ginger, sautéing for 1-2 minutes until aromatic.
6. Pour this tempering over the curd rice and mix gently to combine.
7. Garnish with pomegranate seeds or grated carrots and fresh coriander leaves.

Serving Suggestions: Serve 1001 rice curd rice with pickle or papad for a cooling, flavorful meal, especially great for hot weather.
