Kaveri Rice Vegetable Fried Rice Recipe

Ingredients:

1 cup Kaveri rice (rinsed and soaked for 20 minutes)
2 cups water
2 tbsp oil (or ghee)
1 small onion, finely chopped
1/2 cup mixed vegetables (carrot, bell pepper, peas, and beans, chopped)
1/4 cup spring onions, chopped
1-2 green chilies, finely chopped (optional)
1/2 tsp soy sauce
1/2 tsp vinegar or lemon juice
Salt and pepper to taste
Fresh coriander or additional spring onions for garnish

Instructions:

1. In a pot, bring 2 cups of water to a boil. Add the soaked Kaveri rice, cover, and cook until the rice is soft and fluffy. Once cooked, set aside to cool.
2. In a large pan or wok, heat oil over medium heat. Add chopped onions and green chilies, sautéing until the onions are translucent.
3. Add mixed vegetables and stir-fry for 5-6 minutes until they are tender-crisp.
4. Add the cooked Kaveri rice to the pan, mixing gently to combine the rice and vegetables.
5. Drizzle soy sauce, vinegar, salt, and pepper over the rice, stirring gently to coat the rice evenly.
6. Garnish with chopped spring onions or fresh coriander.

Serving Suggestions: Serve Kaveri rice vegetable fried rice as a standalone dish, or pair it with your favorite curry, dal, or a side of yogurt for a complete meal.
