PR-26 Rice Vegetable Pilaf Recipe

Ingredients:

1 cup PR-26 rice (rinsed and soaked for 20 minutes)
2 cups water
1 tbsp ghee or oil
1/2 tsp cumin seeds
1 bay leaf
2-3 cloves
1 small cinnamon stick
1 small onion, thinly sliced
1/2 cup mixed vegetables (carrot, peas, beans, and potato, chopped)
1/4 tsp turmeric powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

Instructions:

1. In a pot, bring 2 cups of water to a boil. Add the soaked PR-26 rice and cook until the rice is soft and fluffy. Drain any excess water and set the rice aside.
2. In a large pan, heat ghee or oil over medium heat. Add cumin seeds, bay leaf, cloves, and cinnamon stick, sautéing until aromatic.
3. Add the sliced onions and cook until they are golden brown. Then add the mixed vegetables and cook for 5-6 minutes until tender.
4. Add turmeric powder, garam masala, and salt. Stir to coat the vegetables with spices.
5. Gently fold in the cooked PR-26 rice, mixing until everything is well combined and heated through.
6. Garnish with fresh coriander leaves before serving.

Serving Suggestions: Serve PR-26 rice vegetable pilaf with raita, pickle, or a simple salad for a complete meal.
