Sonam Rice Coconut Rice Recipe

Ingredients:

1 cup Sonam rice (rinsed and soaked for 20 minutes)
2 cups water
1 tbsp oil or ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tbsp chana dal (split chickpeas)
1 tbsp urad dal (split black gram)
1-2 green chilies, slit
8-10 curry leaves
1/2 cup grated fresh coconut
Salt to taste
Fresh coriander leaves for garnish
Cashews or peanuts (optional)

Instructions:

1. In a pot, bring 2 cups of water to a boil. Add the soaked Sonam rice and cook until the rice is tender and fluffy. Set the rice aside to cool slightly.
2. In a large pan, heat oil or ghee over medium heat. Add mustard seeds and cumin seeds, letting them splutter.
3. Add chana dal, urad dal, and cashews or peanuts if using. Sauté until the dals turn golden brown.
4. Add green chilies and curry leaves, sautéing for a minute until fragrant.
5. Add the grated coconut and salt, stirring well to combine and cook for 1-2 minutes.
6. Add the cooked Sonam rice to the pan, mixing gently until the rice is evenly coated with the coconut mixture.
7. Garnish with fresh coriander leaves and serve warm.

Serving Suggestions: Serve Sonam rice coconut rice with a side of sambar, raita, or pickle for a traditional South Indian-style meal.
