RPN Rice Lemon Rice Recipe

Ingredients:

1 cup RPN rice (rinsed and soaked for 20 minutes)
2 cups water
1 tbsp oil or ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1-2 green chilies, slit
1/4 tsp turmeric powder
8-10 curry leaves
1/4 cup roasted peanuts or cashews
Juice of 1-2 lemons (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish

Instructions:

1. In a pot, bring 2 cups of water to a boil. Add the soaked RPN rice and cook until the rice is soft but not overcooked. Drain any excess water and set aside to cool slightly.
2. In a large pan, heat oil or ghee over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
3. Add the slit green chilies, curry leaves, and turmeric powder, sautéing for a minute until fragrant.
4. Add the roasted peanuts or cashews and cook for another minute.
5. Add the cooked RPN rice to the pan, mixing gently to coat the rice with the spices and turmeric.
6. Add lemon juice and salt, stirring carefully until everything is well combined.
7. Garnish with fresh coriander leaves and serve warm.

Serving Suggestions: Serve RPN rice lemon rice as a quick and flavorful meal on its own, or pair it with raita, pickle, or papad.
