1064 Rice Lemon Rice Recipe

原料:

1 cup 1064 rice (rinsed and soaked for 20 minutes)
2 cups water
1 tbsp oil or ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1-2 green chilies, slit
1/4 tsp turmeric powder
8-10 curry leaves
1/4 cup roasted peanuts or cashews
Juice of 1-2 lemons (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish

1. In a pot, bring 2 cups of water to a boil. Add the soaked 1064 rice and cook until the rice is tender. Drain any excess water and set aside to cool slightly.
2. In a large pan, heat oil or ghee over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
3. Add the slit green chilies, curry leaves, and turmeric powder, stirring for a minute until fragrant.
4. Add the roasted peanuts or cashews, giving a quick stir.
5. Add the cooked 1064 rice to the pan, mixing gently to coat the rice with the spices and turmeric.
6. Add lemon juice and salt, adjusting to taste. Stir carefully until everything is well combined.
7. Garnish with fresh coriander leaves and serve warm.

Serving Suggestions: Enjoy 1064 rice lemon rice as a light meal on its own, or pair it with papad, raita, or a side of pickle.
